Double Baked Stuffed Potatoes - Brocolli & Chive

4.5 stars (out of 5 - a bit of a hassle to make, but worth it in the end!)

These are one of my all-time favourite sides. They are a bit fussy to make (specifically, I tend to burn my hands trying to hollow out the baked potatoes), but I think worth it in the end. They are a great side dish to a meal (albeit filling!), and I sometimes even eat these as a small meal on their own (or with a salad).

Ingredients (for 2-4 people):

2 large potatoes*
~1 cup grated old cheddar cheese**
~2/3 cup chopped green onion**
1 1/2 cups broccoli**
Sour cream***
Milk***
Salt and pepper***

{*Note. 2 large potatoes will make enough for 4 people if you give them each half (as part of a bigger meal). I usually do 2 potatoes for SB and myself alone, as I will eat a whole one myself (in the place of meat) or save it for lunch the next day.}

{**Note. These amounts are all approximate. You can see the amounts from the pics below, but I do it all to taste. I end up putting quite a bit of green onion in, as the flavour isn't very strong. I just have one suggestion, which is to stir in the broccoli gradually (see below), so that your mixture doesn't end up too dense.}

{***Note. These are suggestions for making the mashed potato part of the recipe. You can use whatever you normally use to make mashed potatoes.}

1. First, I baked the potatoes in the microwave. This usually takes about 6 minutes. Don't forget to pierce them with a fork first!

2. While the potatoes were cooking, I chopped and steamed the broccoli. I usually cook it until it is tender, rinse under cool water (to prevent them from continuing to cook and turning into mush), and set them aside.


3. I also prepare the cheese and green onion during this time.


4. Once the potatoes were cooked, I (carefully!) cut them in half, leaving the skin intact, and let them cool for a little while. Watch out, they're hot!


5. Once the potatoes were cooled to a point I could handle them, I scooped out the inside, leaving a few millimetres around the edge and on the bottom, and placed the extra potato in a medium-sized bowl.




6. I then added the sour cream, milk, salt, and pepper to the potato, and mashed them together. You can add whatever ingredients you wish, and make the mashed potatoes your regular way (e.g., with butter, etc.). Just make sure they're not too runny.


7. After making the mashed potatoes, I stirred in the broccoli, chives, and 1/2 the cheddar cheese, and added salt & pepper to taste.


8. I then scooped this mixture into the potato shells...


9. ... and sprinkled them with the remaining cheese.


10. I baked them at 425F for about 20 minutes (until hot).


Although this recipe can be a bit time-consuming to make, I think it's worth it. In addition, I have made this recipe for company before, and it was very stress-free, as I could prepare them ahead of time, put them (covered) in the fridge, and then pop them in the oven 20 minutes before we were ready to eat. I also like how you can play around with the ingredients to your own taste. Overall, a nice, substantial complement to a meal!

Caramelized Mushroom & Onion Mashed Potatoes with Green Bean Side

My sister visited last September and she honoured us with this recipe for mashed potatoes. I was a little hesitant at first, given my dislike of mushrooms, but we ended up asking her to make this for us at least 2 times during the week!! Sooo good!

Ingredients for Potatoes:

1.5-2 potatoes per person, peeled and cut
Milk and sour cream* (*as you like)
1 package mushrooms
1 onion
2-3 sprigs of rosemary
3 tbsp brown sugar
Butter and olive oil
Salt and pepper

Ingredients for Green Beans:

1 handful of green beans per person
Butter
Salt and pepper

1. First, we prepared the potatoes and added them to boiling water with a few sprigs of rosemary to taste.


2. As the potatoes were cooking, we prepared the mushrooms by washing and slicing them...


3. ... and dicing up the onion into large chunks.


4. We then cut up the rosemary (tip: kitchen scissors work well for this task!).


5. When the potatoes were almost ready, we melted some butter in a pan with olive oil (to prevent splashing and burning of the butter)...




6. ...and added the mushrooms...


7. ...followed by the rosemary...


8. ...and onions (the mushrooms were cooked for about 3-4 minutes longer than the onions).


9. Once the mushrooms and onions were soft, we added the brown sugar and stirred everything together.




10. We let this cook for a while, and at the end drained any excess liquid. This is what it should look like:


11. At this point, we had mashed the potatoes with the milk and/or sour cream and plenty of butter, salt and pepper. You can then either serve the mushroom mixture on top of the potatoes...


12. ... or stirred in. On top looks better, but stirred in tastes better!!


13. We served these with green beans, trimmed and boiled for 4 minutes with butter added.


14. Salt and pepper them and you have a super-easy but refreshing side dish!


The crew eating! Note that we served the mashed potatoes with the eggplant appy's (pictured at the centre of the table: http://etryingtocook.blogspot.com/2009/11/eggplant-feta-appy.html), which we used as a meat replacement for vegetarians. How versatile!


Overall, this was such a treat! A very very delicious meal that my sister showed me and that everyone loved. I love love love mashed potatoes, and this was such a great way to mix it up a bit. They were definitely the best mashed potatoes that I have ever had (and I don't even like mushrooms!). Thank you to MK and SB for helping out with this dish (and to Ash for showing it to us!). I have made these several times since her visit, and they have always turned out. I am thinking that the mushroom/onion sauce can be used to top other things, such as meat. Perhaps, I will try that in the future....

SB's Carrot & Potato Soup

4 stars (out of 5 - a delicious meal-in-a-bowl!)

Ingredients:

2-4 carrots
2 medium-large potatoes
2 large tomatoes
2 small-medium onions
1 leek
1 cube veggie bouillon*

{Note. Use whatever bouillon you normally like; we used veggie so that the soup is vegetarian. We also recommend using celery and the leek is optional... we just had it in the fridge at the time}.


1. First, we put about 2 cups of water in a large pot and brought to a boil.

2. Next, we peeled the carrots and potatoes and chopped them roughly into medium-sized pieces.


3. We then cut the tomatoes into quarters (notice how SB is taking out the core)...


4. ... and cut the leek and onion (not pictured). The onion can be cut just into quarters.


5. We added the veggies and bouillon to the boiling water. The water should basically be deep enough to just cover the veggies. We stirred in some salt and pepper and brought to a boil.


6. Once the soup was boiling, we lowered to heat to low (3-4ish) and simmered for about 40 minutes. We checked on it once and a while to make sure that the water wasn't evaporating too much.

7. After, we added the soup mixture to the blender and mixed it all up!



8. Served with a dollop of sour cream:



Very yummy and filling soup! We ate it with our meals for days. It's also very good for you (no fat). SB thought it was missing something, and then we realized that we had forgot celery, so I think that would be a great addition. Basically throw whatever you have in your fridge in and mix!

Hearty Salad from the South-West of France

5 stars (out of 5 - a very hearty meal in a bowl)

It was SB's birthday dinner and he wanted us to make this huge salad that is popular in the south of France...

Ingredients:

Spring salad mix
Prosciutto
1 package Magret de canard (fumé)
Cherry tomatoes
Shredded cheese*
Potatoes (1 per person)
Eggs (1 per person)

Dressing: (as you wish)
Dijon mustard
Olive oil
White wine vinegar

1. First we peeled the potatoes, and sliced them as finely as we could. We put them in a pan with olive oil and fried them for a long time. You want them to be very well-cooked.


2. As the potatoes were cooking, we shredded the cheese and chopped the cherry tomatoes in half. We also started boiling the eggs (1 egg per person; for soft-boiled we left them in for four minutes).


3. We then made the dressing by mixing in dijon mustard (3 tsp) and white wine vinegard (1 tbsp approx) and olive oil, until smooth.


4. After the potatoes were ready (see above pic), we started the salad by using HUGE bowls and layering the bottom with the spring salad mix and tomatoes.


5. Next, we added a layer of magret de canard...


6. ... and topped this with another layer of salad, followed by the cooked potatoes.


7. Then added the cheese...


8. ...prosciutto...


9. ... and then the magret de canard and potatoes.


10. Finally, we topped it with a soft-boiled egg and the dressing.


We served it with champagne to complete the French experience ;)

Overall, this was a quite delicious salad. I liked the warm egg and potatoes , which made it a very hearty meal (even without meat). I think that for us Canadian meat-eaters (and the budget-conscious), just one of the meats would suffice, but what do I know?! I will definitely be making this again, on another special occasion.

Steak with Tomato Relish, Asparagus Toss, and Potato Wedges

Please note that I had to use my old camera, so the pictures were very blurry. For the next few recipes, I will try to post as many pics as I can, but the quality might not be so great.

Steak with Sweet Tomato Relish

4 stars (out of 5 - a great addition to the meat!)

Ingredients:

1 cup chopped ripe tomato
1/2 cup finely chopped onion
1/4 cup white wine vinegar
3 tbsp sugar
1 lean boneless beef sirloin steak
Salt and pepper

1. First I combined the first 4 ingredients in a saucepan and added some pepper. I brought it to a boil and reduced the heat so that it could simmer for about 8 minutes.

2. As this was cooking, I cooked the steak and the meatless beef. Once it was done, I placed the meat on a plate and covered with the relish. Easy!

Asparagus & Onion Salad

2.5 stars (out of 5 - overpowering vinegar flavour)

Ingredients:

1 bunch of fresh asparagus
1/2- 3/4 cup of sliced green onion (depending on preference)
1/4 cup white wine vinegar*
2 tbsp olive oil
2 tbsp water
1/2 tsp dried thyme
1/2 tsp dried basis
Salt and pepper

{Note. I found that vinegar taste overpowered everything, so in the future I would add much less at first and then take it from there. If it needs more kick, add some more, if not leave as it is}.

1. I actually made this first and refrigerated it so that I didn't have to worry about it at all later on. I like dishes like that! First I trimmed the asparagus and cut them in thirds. I then very briefly boiled it until it was tender-crisp (I think it was about 4 minutes).

2. After they were cooked, I rinsed them under cold water to both cool them and stop them from cooking further.

3. I then added all the ingredients and the asparagus to a bowl and stirred. I let it chill in the fridge for a few hours.



Garlic potato wedges

4 stars (out of 5 - pretty tasty, but a bit of work and time)

Ingredients:

2 medium potatoes (russet)
2 tsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp paprika

1. I first washed to potatoes and then cut each into 8 wedges.

2. I then combined all of the other ingredients into a zip-lock bag and added 1/2 the potato wedges and shook it until they were coated. I repeated this with the second half.

3. I then laid them out on a cookie sheet and sprinkled with any additional ingredients I wanted to amplify (in this case, garlic and salt!).

4. I baked them at 375F for 25 minutes (although it turned out to be longer with my oven). I turned them once and then took them out when they were slightly crispy. Delicious!

Overall, this was a fairly simple meal to prepare, as you can stagger the times for everything. I am not so great at multi-talking in the kitchen, so this was perfect for me. The only criticism I had for this meal was the asparagus, as the vinegar taste was overpowering. That could just be my taste though! I'll definitely make the potatoes and steak again!
