Isabelle's Guacamole

First wedding recipe! We were having fajitas, and love love love them with guacamole, so I thought it would be a great opportunity to try out one of the recipes that Isabelle contributed to my wedding cookbook.

Ingredients:

3 avocados, halved, seeded and peeled*
1 lime, juiced
1/2 tsp salt
1/2 tsp ground pepper
1/2 tsp ground cumin
1/2 tsp cayenne
1/2 medium red onion, diced
2 tomatoes, seeded and diced*
1 tbsp chopped cilantro*
1 clove garlic, minced

{Note. Because it was only for SB and me, I only added 2 avocados and 1 tomato. Unfortunately, the grocery store did not have fresh cilantro, so I did not add it to the guacamole. Next time!}.

1. First I cut up the avocado, and removed the pit.


2. I then mashed the avocados in a medium bowl, until it was fairly smooth (thank you for the tip about the potato masher - much easier than a fork!).


3. I then added the salt, pepper, cumin, and cayenne, and mashed them up again.



4. I then folded in the tomatoes, onions, and garlic (here you would add the cilantro)...



5. ... and added the lime juice.

6. We ate it right away, but it if you are going to serve it on it's own, refrigerate it for a few hours in order for it to cool.


This guacamole was absolutely delicious. Both SB and I loved it. The tomatoes are such a great idea, as they add a bit of freshness to it, and the mix of the other flavours was great. Thank you very much, Isabelle, for this great recipe! I can't wait to make it again.

Easy Fajita Night

Ahhh, another fall-back quick and easy favourite! I looove fajita night. We usually keep an "Ol' El Paso Soft Taco Kit" in the house- it's not the best bang for your buck, but it's so convenient to store. It includes soft tortillas, taco seasoning (which I prefer to fajita seasoning), and salsa. Today, we had planned ahead and bought everything separately.


1. SB sliced and cooked up his chicken breast (1st pic), while I did the same with my "Chick'n" breast (2nd pic).





2. While the chicken/chick'n cooked, we grated some cheddar cheese, opened the sour cream & salsa, chopped some onion & green pepper, and mixed the taco seasoning with 1/2 cup of water.

3. We both do ours differently: SB likes to throw everything together and then stick it in the oven for about 5 minutes at 400F, until it's all melted. It doesn't look very appealing, but I'm sure it tastes good!


4. I, on the other hand, like to add my chicken to the tortilla, add the veggies, then sour cream, then cheese. I don't like my cheese melted. Then I roll it up into a nice, neat bundle.




Overall, quick, simple, and tastes great!
